Brine your turkey if it's not pre-brined.

When ready to cook, let the turkey sit at room temperature for at least 30 minutes.

Add oil to the turkey fryer and set it to high heat. Bring the oil temperature to 350°F.

Cook the turkey for 3 1/2 minutes per pound. Start timing once the turkey is submerged in the oil.

After reaching 350°F, slowly lower the turkey into the oil, watching for any oil reactions. Maintain the temperature at 350°F.

Once the turkey is in, reduce heat to maintain 350°F.

After the calculated cooking time, check the turkey's temperature with a probe thermometer. Remove from oil when the breast reaches at least 151°F; do not exceed 165°F.

Rest the turkey for at least 30 minutes before carving. The internal temperature will rise to 165°F or more during resting. Cover with foil or place in a brown paper bag.

After resting, carve the turkey.
