Cast Iron Skirt Steak

Cast-iron skirt steak offers robust flavor. Its rich marbling ensures juiciness and depth of taste. Cooked in a cast-iron skillet, it develops a tantalizing crust while maintaining succulent tenderness. Alternative cuts include Top or Bottom Sirloin and Flank.

instructions

step 1

Follow the instructions on the back of the McCormick Grill Mates Mesquite Marinade Mix package. First, add water into a mixing cup or bowl.

Add cooking oil into the mixing cup or bowl.

Add as much salt as you wish, but ensure you stir the solution and that it becomes slightly opaque due to the salt.

Add drops of Worcestershire sauce as you stir the marinade. When it begins to change to an even color resembling Worcestershire sauce, that is enough.

Add marinade mix from the packet and stir well.

Place your steak in a marinade container or bag.

Pour the marinade into the container or bag.

Allow your steak to marinate for up to 24 hours, ideally overnight.

One hour prior to cooking, remove your steak from the refrigerator and let it come to room temperature.

10-15 minutes prior to cooking, preheat your cast-iron pan on high heat. Lightly grease the pan, an easy method is by cooking a piece of bacon in it over high heat. When the bacon is done, the pan is ready.

Begin by placing the steak in the pan. Allow the steak to sear for at least 10 minutes on one side.

After 10 minutes, flip the steak and cook it for another 10 minutes.

Optional, but if you wish for your steak to be more than rare to medium rare in the middle then you need to add 1-2 minutes or more to each side of the steak when you're cooking each side.

Take the pan with the steak off the hot burner and place it on a cold burner. Cover it with another cast-iron pan and let it rest for one hour. The steak will continue to cook from the residual heat and then gradually cool, allowing the juices to settle.

Place the steak on a cutting board and cut it into thin slices against the grain, no more than 1 centimeter in thickness.

You can heat the marinade to a light sauté from the bag as a dipping sauce and/or pour it over the steak. The steak is now ready to serve.
